Supreme Rice

Black Bean and Rice Salad

Serves: 6


  • 2 cups cooked rice, cooled to room temperature
  • 1 cup cooked black beans
  • 1 cup fresh tomato, chopped
  • 4 ounces Cheddar cheese, shredded
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup prepared Italian dressing (any type may be used)
  • Lettuce leaves


In large bowl, combine rice, beans, tomato, cheese and parsley. Pour dressing over rice mixture; toss lightly. Serve on lettuce leaves.
