Banana Kiwi Pudding
Serves: 4
Ingredients
- 1 1/3 cups cooked rice
- 1 1/3 cups skim milk
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 1 ripe banana
- 1/4 cup whipping cream
- 2 kiwi fruit, sliced
Directions
Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently. Remove from heat; cool. Stir in vanilla and sugar.
Just before serving, mash banana; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.
